Ok - Here it is, a fat-free, pure carb recipe for....:
Rye and Oat Cookie crusted Apple and Pear Pie
Crust-
1.5 cup ground oats
0.5 cups wholemeal rye flour
1.5 cup old fashioned rolled oats
1/2 cup sweetener (or sweeten to taste with desired sweetener - I use stevia)
1.5 teaspoons ground cinnamon
0.5 teaspoon nutmeg
1 teaspoon baking soda
3/4 cup unsweetened applesauce
1 egg white
2 teaspoons vanilla essence
~ Preheat oven to 180°C and prepare a pie dish (a shallow dish, about 9 inches)
~ Mix together the flour, oats, sweetener, spices and baking soda.
~ In another bowl, mix the applesauce, egg white and vanilla.
~ Add the wet mix to the dry mixture and blend well.
~ Place 2/3rds of the mixture into the dish and knuckle out to form the base (about 1 cm thick) [alternatively, on a floured surface, just roll out the mixture and transfer it into the dish]. Cover with aluminium foil and fill with blind baking shells then bake for around 10-15 minutes before removing.
~ Allow the crust to cool and harden.
The filling -
5 apples, peeled and sliced into raw chunks
2 pears, peeled and sliced into raw chunks
1 tablespoons honey
3/4 cup 100% natural apple juice
1 teaspoons cinnamon
0.5 teaspoons ginger
2 teaspoons vanilla extract
1 tablespoon gar gum (to thicken - can use cornstarch if you can't find this)
1 teaspoon grated fresh ginger
1 tablespoon lemon juice
~ Combine apples, pears, honey, ½ cup apple juice, cinnamon, vanilla, marmalade and lemon juice in a saucepan and cook over medium heat, until apples are tender.
~ In a cup, mix the gar gum and the remaining apple juice and add this to the apple mixture and cook until it thickens (usually takes about 5 minutes).
~ Turn the heat off and allow the mixture to sit and thicken further.
~ Spoon the apple mixture into the baked crust, roll out the remainder of the crust mixture and place over the pie. Firm down and crimp the edge, cut some air holes in the top of the pie and place back into the hot oven and for a further 15 to 20 minutes.
Serve warm with warm custard or vanilla ice-cream.
