I made this soup yesterday. It's simple and very good! Maybe a bit high on sodium thanks to the vegetable juice, but relatively healthy otherwise.
1 pound ground beef
1/2 cup chopped onions
2 cloves minced garlic
14.5 ounce can Italian style stewed tomatoes
4 cups spicy vegetable juice
2 tsp basil
10 oz package frozen corn niblets
10 oz package frozen cut green beans
2 cups cole slaw mix
Cook ground beef, onions, and garlic in skillet until meat is cooked. Drain fat.
Combine beef mixture and all other ingredients in crock pot. Cook on low heat for 8 to 10 hours, stirring occasionally.
My notes:
V8 zesty vegetable juice works fine.
I add about six cloves of garlic instead of two.
I use Italian seasoning instead of just basil.
I cooked mine for 9 hours.
