I'm 6'1" and used to weigh in at 165 lbs @ 7% body fat. That was when I was in school and was able to nibble on my snacks throughout the day to get in 3200-3500 kcals/day. I was very pleased with the way that I looked but even then wanted to get bigger.

Problem is now I'm done with school and working 11 hours a day 5-6 days a week. I can't nibble on my food throughout the day anymore and am struggling to get in 2600-3000 kcals/day now. Now I'm down to 157 lbs. Leaner than before but I feel small and I struggle to bench 40 lbs under what I used to do. At this point I'd be happy just to get back to a lean 165 lbs and maintain that weight.

I've never really had any fat on me my entire life, so I'm wondering if i should just cram in calories from fruit juices, nutella, chicken wings and w/e else happens to be in front of me. Any advice from other hard gainers or people with small appetites would be very appreciated.

Try liquid calories

Shakes with oats, and peanut butter, macadamia but oils and stuff like that.

Don't be shy with the healthy fats.

Protein powders and even some weight gainers will probably help.

Olive oil shots in your shakes. Easy way to add calories.

No fried foods, no soda... Other then that eat as much as you can of whatever goes down easy. Remember though shit food makes you lethargic and makes you not want to eat as often. Just try to eat calorically dense foods you like. Even if its not perfect.

^^ Definitely - if you've got time to eat shitty food, then you've got time to get better quality, calorie-dense food. Just like w/ everyone else - the food part takes some planning. If you can keep shakes with you, do that & make them thicker. Olive oil was suggested. You can also throw some PB in them for more good fats calories. Nuts are also very portable. When you can hit your full meals, make them count. Get good fats & carbs in there. Things like quinoa are more robust carb sources.

If you want to explore alternatives, with your schedule you might find Intermittant Fasting fits better.

This is solid advice right here I would avoid crappy food at all costs for sure. I think that you should avoid these at all costs and replace them with GOOD cals. Healthy fats are so important when it comes to energy and balance. Make sure your getting your protein in also. I think you should get at least two shakes in per day. I would add some fun stuff in them too to make sure you don't get bored also.

Buy a thermos. You can blend your high -cal shake in the morning with ice, it will keep cool all day. 2000 cals no problem, just divide it into 4 serves.

For my own meal replacement I use:

24oz liquid of your choice (I use vanilla almond milk 2g sugar per 8oz)
2 servings of protein powder (I use chocolate whey or egg white powder)
3/4c of oats
56g raw almonds
ice

blend that shit up and split it into two servings. You can obviously make more servings if you need more meals but I think this gets in some healthy carbs, fats, and protein. An ideal meal replacement while keeping sugars down pretty low. It would be higher if you used milk since its higher in sugar, and my whey also has sugar where the egg whites don't.

Almond milk is good. So is oat milk - got some fibre in it

Oats!!! Used them in your shakes helps add calories! Stay with clean food, hard work and good eating plus a lot of patience will give results wanted!
