Does anyone know if deep frying a turkey causes the same amount (or more) of trans-fatty acid absorbtion as fried chicken? Since the turkey isn't breaded and the outside is basically seared immediately, I wouldn't think so. Any thoughts?

Well very little is absorbed in the skin because of the searing that takes place when you put it in the oil. There is none in the turkey at all. Just good juicy white meat!! Not dry!Originally posted by mochy

The oil turns into transfatty acids once it reaches a certain temperature. Some oils turn quicker than others.
