It is sooo good! Strawberries & Cream Crepes
1. Partially thaw 5 frozen strawberries...not all the way though, just enough so you can slightly indent them when you press on them. Place in food processor and add 1-3 tbsp of cream (whatever your fat allowance is for that meal) and a sweetner of choice. Blend well and set aside.
2. In food processor (or blender or them little hand mixer thingys) mix 4 egg whites (or enough to make your protein count for your meal), 1 tbsp ground flax seed meal, 2 tbsp oat flour, 1 sweetner. Beat till light and fluffy
3. Heat a heavy pan, spray it, and cook over medium heat as you would crepes or pancakes. Do one at a time, it's very runny, in the centre of the pan...it takes only seconds to set, then flip.
When all cooked....fill w/ the creamy strawberries....you'll never know it's not the real thing...these were so good I even forgot about the SF chocolate sauce I was going to add
